Chicken Francais

This recipe came from the Cooking Light cookbook I checked out of the library awhile back. We made it for a friend that came over, and we all thought it was good. Here goes:

2 eggs
2 tbsp lemon juice
1/8 c parmesan
1/8 tsp salt
dash parsley
pinch hot pepper
1/4 c white wine
1 garlic clove
2 large/3 small chicken breasts
1/8 c flour
1/2 tbsp oil
1 tbsp butter

Mix first 8 ingredients together, using 1/2 lemon juice and 1/2 wine
Pound chicken t0 1/4" thickness
Dredge chicken in flour, then in egg mixture
Heat oil in skillet over medium and cook chicken 4 minutes on each side
Remove chicken, then add butter to melt in skillet
Add the other 1/2 of wine and lemon juice and bring to a boil
Cook 10 seconds then pour over chicken
Serve immediately

I love all of your recipes and I love how you do meal plan Monday. I do that too!! I never thought about posting in on my blog though!! Cute idea!! I can't wait to try some of your recipes.
