I just made this soup and it was so delicious! It is from the Weight Watchers cookbook 'Winner's Circle'.
Ingredients:
1 tsp canola oil
1/2lb skinless boneless chicken breast, cut into thin strips
1 onion chopped
3 garlic cloves, minced
2 tsp ground cumin
4c low sodium chicken broth
1 (14 1/2oz) can diced tomatoes
1 (10 oz) box frozen whole kernel corn
1c prepared salsa
1/4c chopped fresh cilantro
1/4c shredded reduced fat cheddar cheese
12 baked tortillas chips, crushed (about 1/2c)
-Heat oil in a large nonstick saucepan over medium-high heat. Add the chicken quickly and cook until browned, about 6 minutes. Transfer the chicken to a plate and set aside.
-Add the onion and garlic to the pan. Cook, stirring occasionally, until tender, about 8 minutes. Stir in the cumin and cook 1 minute. Add the broth, tomatoes, corn and salsa; bring to a boil. Reduce the heat and simmer, uncovered, until the flavors are blended, about 10 minutes. Return the chicken to the pan and heat through. Remove the pan from the heat and stir in the cilantro. Serve the soup with the cheese and chips.

I accidentally used a 16oz bag of corn, so there was a lot of corn in ours, but it was still delicious. I think if you seasoned the chicken with some extra cumin while you were cooking it would be a good addition. Otherwise, the soup was really easy and flavorful, and healthy!
