Shrimp Fried Rice

I can't believe I haven't made fried rice before...its so good and easy to make! Here is a weight watchers recipe I made last week.

Ingredients:
1 cup regular Egg Beaters
2 tsp canola oil
1 cup frozen peas and carrots, thawed
4 oz frozen shrimp, thawed under cold water
2 cups quick cooking brown rice, cooked
4 tbsp, low sodium soy sauce

1. Coat a wok or large skillet with cooking spray and heat until an added drop of water sizzles.
2. Scramble egg substitute in wok. Remove when cooked and set aside.
3. Add oil, peas and carrots and shrimp to the wok. Stir fry for 5 minutes.
4. Add cooked rice, eggs and soy sauce. Stir fry for about 3 minutes.

Yields about 1 1/2 cups per person, serves 4. 7 points per serving, so apx 350 calories.

Black & White Cookies

These cookies are absolutely the most delicious thing I've eaten! Bart and I saw them everywhere in NY and tried them at least once, so I was really excited when I saw a Cooking Light recipe for them. They are pretty easy to make, too. Here's the info:

Ingredients-cookies:
1 1/2 cup all purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
2/3 cup applesauce
1 cup sugar
1/4 cup butter, softened
1 1/2 tsp vanilla
2 large egg whites

Ingredients-frosting:
1 1/2 cups powdered sugar
3 tbsp milk
1/4 tsp almond extract (I omitted)
2 tbsp cocoa

1. Preheat oven to 375.
2. Combine flour, baking powder and salt.
3. Drain applesauce (this just means put it on a paper towel to let the liquid part soak out)
4. Combine applesauce, sugar and butter. Beat for 2 minutes. Beat in vanilla and egg whites.
5. Add flour mixture and beat at low speed until just blended.
6. Drop dough 2" apart (make sure they are far apart!) on parchment lined baking sheets. Bake at 375 for 10 minutes or until set (not browned). Cool on pans 2 minutes or until firm. Remove to wire racks to let cool completely.
7. To make frosting, combine 3/4 cup powdered sugar, 1 tbsp milk and almond extract. Stir well with whisk until smooth. Spread 1 tsp white frosting over 1/2 cookie. Let stand 10 minutes or until set.
8. Combine 3/4 cup powdered sugar and cocoa. Gradually add 2 tbsp milk, stirring with whisk until smooth. Spread 1 tsp frosting on the other side of the cookie.

Makes 2 dozen. Each has 106 calories and 2 grams of fat.

I didn't use parchment paper because I didn't have any...and the recipe specifically said not to use wax paper. So I turned to oven a little lower than 375. The chocolate icing goes a lot farther than the white, so use the white sparingly. The cookies are so soft and taste so good! You will love them!

Chocolate Chocolate Chip Cookies

These are so yummy!

Ingredients:
1c all purpose flour
1/4 tsp baking soda
1/8 tsp salt
1/4c butter, softened
1/2c dark brown sugar, packed
1/2c sugar, granulated
1/3c unsweetened cocoa
2 large egg whites
1/3c miniature semi sweet chocolate chips

-Preheat oven to 350. Lightly spoon flour into a dry measuring cup. Combine flour, baking soda and salt in a large bowl.
-Beat butter and brown sugar with a mixer at medium speed until light and fluffy; gradually add sugar, beating well. Add cocoa and egg whites, beating well. Gradually add flour mixture, beating until blended. Stir in chocolate chips.
-Drop by rounded teasonpoonfuls 1 in apart onto baking sheets coated with cooking spray. Bake at 350 for 10 minutes.

Makes 40 cookies, each is '1 point' so probably between 50-75 calories.

Baked Shrimp in Lemon Garlic Sauce

I just made this and it was great! I am a big fan of shrimp, but I usually don't love recipes I make at home with it. I am so glad to have found this one.

Ingredients:
1 1/4 pound shrimp, peeled and deveined
1/4c lemon juice
2 tbsp light butter, melted
3 medium garlic cloves, minced
1 tsp Worcestershire sauce
3/4 tsp lemon pepper
1/4 tsp ground red pepper
2 tbsp parsley, chopped

-Preheat oven to 425. Arrange shrimp in a single layer in a 9x13 baking dish coated with cooking spray. Combine lemon juice and next 5 ingredients, pour over shrimp.

-Bake at 425 for 8 to 10 minutes or until shrimp are done. Sprinkle parsley over shrimp; serve immediately.

Makes 4 servings, apx 200 calories per serving.

I also experimented tonight with the Ore-Ida steam and mash potatoes, and we really liked them. We tried the garlic flavor and they complimented the sauce from the shrimp really well. All you have to do is microwave and then add some milk. You should try them!

Tilapia

Here is another weight watchers recipe that ended up being really good! The last time I made tilapia it was pretty fishy, so I am so glad this one turned out better.

Ingredients:
1/4c white wine, dry
1/4c tomatoes, seeded and chopped (I omitted)
2 tbsp lemon juice
2 tbsp capers, drained (I omitted)
1 medium garlic clove, minced
1/2 tsp dried basil
1 1/2lbs tilapia, four 6 ox pieces
1/2 tsp salt
1/4 tsp black pepper
1/4c all purpose flour
1 spray cooking spray
1 tbsp olive oil
2 tbsp light butter
2 tbsp chopped parsley

Combine first 6 ingredients, stirring well with a whisk; set aside.
Sprinkle fillets with salt and pepper. Dredge fillets lightly in flour and coat both sides with cooking spray.
Heat oil in large nonstick skillet over medium-high heat. Add fillets, cook 3 minutes. Reduce heat to medium, turn fillets and cook 3 minutes or until fish flakes easily when tested with a fork. Remove from pan.
Add wine mixture to pan; cook 30 seconds, stirring constantly. Remove from heat, stir in butter until metled. Spoon wine mixture over fillets; sprinkle with parsley.

Serves 4, one serving is about 250-300 calories.

I ended up not dredging in flour, but I'm sure it would be delicious to do that. Hope you enjoy!

Deep Dish Pizza 'Casserole'

This is what I made tonight, and it was great! We ate it while watching the new season of the Biggest Loser, which is our favorite!! Thankfully, this is pretty healthy so we didn't have to feel bad about eating it while watching the show :)


Ingredients:

1 lb ground round (I used ground turkey)

1 10oz can refrigerated pizza dough

1 15oz can tomato sauce

6 1oz slices part skim mozzarella cheese



Brown meat, drain. Add tomato sauce and cook until heated through. Grease 9x13x2" dish and press pizza dough into bottom and partially up the sides. Line dough with 3 slices mozzarella. Top with meat mixture. Bake uncovered at 425 for 12 minutes. Top with remaining 3 slices mozzarella and bake 5 minutes more, or until cheese is melted.



Nutritional Info: 6 servings, each serving has 277 calories, 7.7g fat and 1.6g fiber

South of the Border Chicken Soup

I just made this soup and it was so delicious! It is from the Weight Watchers cookbook 'Winner's Circle'.

Ingredients:
1 tsp canola oil
1/2lb skinless boneless chicken breast, cut into thin strips
1 onion chopped
3 garlic cloves, minced
2 tsp ground cumin
4c low sodium chicken broth
1 (14 1/2oz) can diced tomatoes
1 (10 oz) box frozen whole kernel corn
1c prepared salsa
1/4c chopped fresh cilantro
1/4c shredded reduced fat cheddar cheese
12 baked tortillas chips, crushed (about 1/2c)

-Heat oil in a large nonstick saucepan over medium-high heat. Add the chicken quickly and cook until browned, about 6 minutes. Transfer the chicken to a plate and set aside.
-Add the onion and garlic to the pan. Cook, stirring occasionally, until tender, about 8 minutes. Stir in the cumin and cook 1 minute. Add the broth, tomatoes, corn and salsa; bring to a boil. Reduce the heat and simmer, uncovered, until the flavors are blended, about 10 minutes. Return the chicken to the pan and heat through. Remove the pan from the heat and stir in the cilantro. Serve the soup with the cheese and chips.

Nutrition info: 4 servings, each serving is 2 1/2 cups. Calories-276, Fat-7g, Fiber-7g

I accidentally used a 16oz bag of corn, so there was a lot of corn in ours, but it was still delicious. I think if you seasoned the chicken with some extra cumin while you were cooking it would be a good addition. Otherwise, the soup was really easy and flavorful, and healthy!
